Yuma Fritas to Bring Cuban Flavors to Rochester This December

UPDATE: A new culinary experience is set to debut in Rochester as Yuma Fritas, a “Cubanish” restaurant, prepares to open its doors in mid-December 2023. Located at 808 Broadway Ave. S. in the Soldiers Field Plaza, this exciting addition fills the space previously occupied by Taco Jed, which closed in October after seven years in operation.

Chef Justin Schoville and his partner Lindsay Zubay, known for their successful venture Championship Dining, are aiming to bring the vibrant flavors of Cuba to the heart of Rochester. Schoville states, “The concept began during a visit to Florida where I discovered fritas in Miami. It’s been an idea my wife and I have been cultivating for a while.”

Yuma Fritas will specialize in fritas, a Cuban street burger traditionally made with chorizo and topped with shoestring potatoes. The menu will feature a variety of fritas options, including chorizo, beef, chicken, and fish, all served on a toasted egg bun. Exciting toppings such as Havarti cheese, bacon, cherry tomato salsa, avocado, and mango slaw will also be available.

In addition to their signature fritas, the restaurant will offer a traditional Cuban sandwich alongside a plant-based alternative. Diners can look forward to fried plantains, coconut ginger rice, and unique Cubanish dishes like fritters made from malanga root.

To complement the meal, Yuma Fritas will serve refreshing batidos, tropical smoothies crafted from ingredients like coconut, guava, mango, and caramelized pineapple. “We’re finalizing the recipes now,” Schoville added, highlighting their commitment to authenticity.

The bar will feature a full menu of tropical cocktails, including mojitos, Cuba libres, daiquiris, and piña coladas. Instead of fountain drinks, patrons can enjoy imported bottled drinks made with cane sugar, such as Coca-Cola and Fanta.

With plans to employ a team of 20 to 30 staff members, Yuma Fritas will operate seven days a week, meeting the growing demand for diverse dining options in Rochester. Schoville believes the casual dining concept fits perfectly into the former Taco Jed space, stating, “We just need the three Ps — paint, plants, and a playlist.” He envisions a vibrant atmosphere filled with a curated Cuban playlist and plenty of greenery.

Yuma Fritas is poised to be a game-changer in Rochester’s culinary scene, merging traditional Cuban flavors with a modern twist. As the opening date approaches, excitement builds for this new dining destination that promises to deliver an unforgettable taste of Havana.
